One ability I don't have and wish I did is the ability to get someone to stop talking. I am apparently great at feigning interest, though, because I try to look extremely bored when someone is taking way too much of my time, and that never works.

I find that hardly ever works, especially if the person in question is that oblivious. Sometimes being a lot more direct is what it takes.
Yeah - keeping eye contact really does give people the impression you are listening. Now, if you look the other way and mutter "uh-huh" over and over again, they sometimes get it. Or if while you are looking at them, if you get a more angry look on your face - that works great! I have one look that I get which says "LEAVE ME ALONE!", but than again, I think I developed that naturally growing up where I did.
I tried the "looking around the room" and just saying "right" every thirty seconds, but that didn't work. All I had to say was "I need to get back to work" but I couldn't really get a word in without interrupting.

Looking deeply into one's eyes mentally screaming "I HATE YOU" just looks like you are intently listening.
